I wish I craved things like kale or liver, but I definitely do not.

I crave Big Macs. I love Big Macs! I generally only let myself buy one once a year, because they’re obviously not a healthy choice, but man. I love that Big Mac sauce.

This Big Mac recipe is made mostly in a skillet, and if you happen to have leftover baked potatoes in the fridge, it comes together super quick. Perfect for a hectic weeknight dinner!

You can also cook some potatoes in your instant pot, which is what I did today. How long they take really depends on how big they are. I had enormous potatoes, so I cooked them on high pressure for 40 minutes, and they were perfect. Smaller potatoes will, of course, take less time.

Let’s talk about the sauce. Many copycat recipes call for thousand island dressing, but I rarely have that on hand. My recipe uses simply condiments you most likely already have in your fridge, again, making this perfect for an easy weeknight meal. I happen to think the sauce is spot on in this recipe, but taste and adjust the ingredient amounts to your taste.

The optional sauerkraut isn’t necessary to get the big mac flavor, but it does add more crunch along with the lettuce, plus, raw sauerkraut is good for you – probiotics, anyone? Farmhouse Culture makes a dill pickle sauerkraut that is perfect for this recipe, and we love it. Trader Joe’s makes a pretty good sauerkraut, too.

The cheese is totally not necessary, but the caveboys love to sprinkle cheese on their food. If you’re dairy free, you won’t miss the cheese in this dish!

I made this for lunch and fed the Caveboys sandwiches, because I wasn’t sure how the Big Mac recipe would turn out. Jonathan (9, almost 10) finished his sandwich, and then polished off a bowl of this Big Mac skillet. He said it was great!

Alright! Let’s get to the Big Mac recipe!

Big Mac skillet recipe

1 lb. ground beef
1 medium onion, diced
8 C. diced baked potatoes
1 batch Big Mac sauce recipe*
Shredded lettuce
Optional: shredded cheese, dill sauerkraut or chopped pickles

  1. Prepare sauce and set aside.
  2. Brown ground beef in a skillet over medium heat. When meat is almost done, add onion and continue cooking until onion is soft.
  3. Add potatoes to skillet. Cook and stir until everything is hot.
  4. To serve: Place a handful of lettuce on a plate, then spoon on meat and potato mixture. Dollop sauce over top, and add the optional toppings if you want. Enjoy!

    * Big Mac sauce recipe

    1/2 cup mayonnaise (I use avocado oil mayo)
    3 T. ketchup
    2 t. yellow mustard
    3 T. sweet relish
    1 1/2 t. sugar or honey

    Stir together all sauce ingredients in a bowl until well mixed. Set aside for 15 minutes for flavors to meld.
